  • 1 3/4 cups of hearts of palm or artichoke hearts, drained & coarsely chopped 
  • 1/4 cup of chopped red bell pepper 
  • 1/4 cup of chopped onion 
  • 1 minced clove of garlic
  • 1/4 cup plant-based mayonnaise
  • 1 tablespoon of ground flaxseed (or chickpea flour) combined with 2.5 tablespoons of water
  • 1 teaspoon of Dijon mustard
  • 1/2 teaspoon of Old Bay seasoning
  • 1/2 cup of breadcrumbs
  • salt & pepper (for taste)
  • 2 tablespoons of vegetable oil for frying


  1. Combine the chopped hearts of palm or artichoke hearts, chopped bell pepper, onion, & crushed garlic in a big bowl.
  2. Combine vegan mayonnaise, flaxseed meal, Dijon mustard, & Old Bay seasoning in a separate bowl. Stir until thoroughly mixed.
  3. Then, add the mayonnaise mixture to the hearts of palm mixture. Stir until all ingredients are evenly coated.
  4. Add the breadcrumbs slowly & stir until the mixture holds together. Add salt & pepper to taste.
  5. Form the ingredients into patties. Add more breadcrumbs if the mixture is too moist, or add additional vegan mayonnaise if the mixture is too dry.
  6. Put the oil in a cooking pan & heat it over medium heat. Fry the patties for approximately 3 to 4 minutes per side or until golden brown.
  7. To make a full meal, serve your vegan crab cakes with vegan tartar sauce, lemon wedges, & a fresh salad.
