- 1/4 cup of chopped onion
- 1 minced clove of garlic
- 1/4 cup plant-based mayonnaise
- 1 tablespoon of ground flaxseed (or chickpea flour) combined with 2.5 tablespoons of water
- 1 teaspoon of Dijon mustard
- 1/2 teaspoon of Old Bay seasoning
- 1/2 cup of breadcrumbs
- salt & pepper (for taste)
- 2 tablespoons of vegetable oil for frying
Instructions:
- Combine the chopped hearts of palm or artichoke hearts, chopped bell pepper, onion, & crushed garlic in a big bowl.
- Combine vegan mayonnaise, flaxseed meal, Dijon mustard, & Old Bay seasoning in a separate bowl. Stir until thoroughly mixed.
- Then, add the mayonnaise mixture to the hearts of palm mixture. Stir until all ingredients are evenly coated.
- Add the breadcrumbs slowly & stir until the mixture holds together. Add salt & pepper to taste.
- Form the ingredients into patties. Add more breadcrumbs if the mixture is too moist, or add additional vegan mayonnaise if the mixture is too dry.
- Put the oil in a cooking pan & heat it over medium heat. Fry the patties for approximately 3 to 4 minutes per side or until golden brown.
- To make a full meal, serve your vegan crab cakes with vegan tartar sauce, lemon wedges, & a fresh salad.
