Ingredients for Making Jackfruit Biryani:

  • 1 kg of raw jackfruit
  • 2 cups of basmati rice
  • 2 large onions, thinly sliced
  • 1 cup of Vegan yogurt
  • 1/2 cup of chopped mint leaves
  • 1/2 cup of chopped coriander leaves
  • 2 teaspoons of ginger-garlic paste
  • 2 teaspoons of red chili powder
  • 2 teaspoons of biryani masala powder
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander seeds
  • 2-3 bay leaves
  • 5-6 cloves
  • 5-6 green cardamoms
  • 2-3 cinnamon sticks
  • 1/2 cup of vegetable oil
  • Salt to taste
  • 2 cups of water

Preparation:

  1. Clean and cut the jackfruit into small pieces. Remove the seeds and discard them. Rinse the jackfruit pieces thoroughly with water and set them aside.
  2. Soak the basmati rice in water for 30 minutes. Drain the water and set the rice aside.
  3. In a large bowl, whisk the yogurt and add the red chilli powder, biryani masala powder, and salt to taste. Mix well and set the bowl aside.
  4. Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds, coriander seeds, bay leaves, cloves, green cardamoms, and cinnamon sticks to the pot. Sauté the spices for 1-2 minutes or until they become fragrant.
  5. Add the sliced onions to the pot and cook until they turn golden brown.
  6. Add the ginger-garlic paste to the pot and sauté for 1-2 minutes.
  7. Add the jackfruit pieces to the pot and cook for 5-7 minutes or until they become tender.
  8. Add the yogurt mixture to the pot and stir well. Cover the pot and let the jackfruit cook for 5-7 minutes.
  9. Add the chopped mint leaves and coriander leaves to the pot and mix well.
  10. In a separate pot, add the 2 cups of water and bring it to a boil. Add the soaked rice to the pot and cook for 5-7 minutes or until the rice is partially cooked. Drain the excess water and set the rice aside.
  11. Layer the partially cooked rice on top of the jackfruit mixture in the pot. Make sure that the rice is evenly spread out.
  12. Cover the pot with a tight-fitting lid and cook the biryani on low heat for 10-15 minutes or until the rice is fully cooked.
  13. Turn off the heat and let the biryani rest for 5-10 minutes before serving.
  14. Garnish with chopped coriander leaves and serve hot.

If you are using canned jackfruit, make sure to rinse it thoroughly with water and drain it well before using it in the recipe.
